Delicious Energy Bites!

Hey guys!
So recently, I have been cooking and baking a lot more. I attribute this sudden desire to be in the kitchen to Pinterest- I'm totally obsessed. You can follow me here! Yesterday as I was studying, I decided to take a break to make these delicious Energy Bites from daydreamkitchen! The best part? No baking required and they're ready in less than 45 minutes!

I followed the recipe on daydreamkitchen, which you can find here- with some minor adjustments. I skipped the coconut flakes altogether because I didn't have any and I'm not the biggest fan of coconut. The recipe called for 1/2 cup of peanut butter, but I decided to use 1/4 cup of peanut butter and 1/4 cup of almond butter instead. This allowed me to make the bites a little healthier, but also keep the integrity of the taste. The other adjustment I made was instead of using 1/3 cup of honey, I filled the 1/3 measuring up half-way with honey and the other half with agave nectar!

I asked my brother what he thought, and he said they reminded him of "a better version of a Chewy bar". Personally, I think they taste like oatmeal cookie dough! Delicious! These are a great snack if you're gluten free like I am. I highly recommend them!

  1. hi Riann !! i recently found out about you on youtube when i was doing a thrift search, it was kind of random. And my sister and i stumbled upon your thrift haul videos. We loooooved them because we both are obssessed with thrifting as well. Since then i have watched most of your videos and i love them !!! I love them because you re-inspire me to always be more put together and you re-ignited my passion and love for all things girly. I too love make-up, nail polish, clothes, shoes, bags, hair styling etc.... and its so rare to find someone that re-inspires you to continue doing what you love. so thank you and i really hope to see more thrift hauls soon. Your fan.
